Executive Chef - Vincent Cavalli

Vincent Cavalli, the Executive Chef at the Sheraton Fairplex Hotel & Conference Center began his passion for food at a very young age as he started working the restaurant scene as a young dishwasher on the east coast. As his passion for food grew, he found his way to the great restaurants of Los Angeles and Las Vegas and developed his culinary skills as a chef.

Through his career he has been privileged to be work with many teams who won awards ranging from Michelin stars to James's Beard awards. Though his journey an appreciation for farm fresh produce and heritage cooking was developed which brought him to the Sheraton Fairplex.

"Vinny" worked under our former Executive Chef David Tieg, for multiple years while assisting in development of our own 5 acre sustainable farm brand. He is responsible for all of the Sheraton's culinary operations including the hotel, state of the art conference center and now the "The Farm at Fairplex" where we entertain guest surrounding them in sustainable produce and live cooking on our wood burning grills and ovens.
